Mint & Cucumber Raita Dip



Great dip for your kebobs and bhaji's

This is the stuff you get with a take-away kebab. 


Ingredients;

1 Large cucumber, seeded, peeled and grated.
1 Teaspoon of ground cumin.
1/4 Teaspoon of paprika.
500 g Plain yoghurt (I'm using this one).
Handful of fresh mint leaves, chopped. You can use 4 tablespoons of dried mint but would advise against it.


Method;

1. Whisk all ingredients together in a bowl except the cucumber and season with salt and pepper.

2. Add the cucumber to the mixture and stir in.

3. Cover the bowl with cling film and leave it in the fridge for several hours before serving.

Serve as is or add a sprig of mint on the top for effect.

Great with curry's, kebabs, kebobs, bhaji's etc.
