General Tao's Chicken

Great little dish that my terrible photograph does not do justice.

Really easy to make and most of you will already have all the ingredients in your cupboard.

Ingredients;

2 Large chicken breast fillets. Cut into bite size pieces.
2 Eggs. Whisked.
1 Heaped teaspoon of ground ginger.
1 Teaspoon of baking powder/ MSG.
4 Tablespoons of flour or corn starch.
4 Tablespoons of tomato sauce.
4 Tablespoons of dark soy sauce.
4 Tablespoons of oyster sauce.
4 Tablespoons of white vinegar. (You can get away with malt vinegar).
2 Tablespoons of sugar.
1 Large onion. Chopped.
1/2 Teaspoon of ground black pepper.
1/2 Cup of water.

Method;

1. Put the chicken and whisked eggs into a bowl and coat all the pieces. Add the flour and repeat.

2. Heat four tablespoons of sesame oil (vegetable oil will suffice) in a wok or deep sided frying pan and add the chicken pieces and cook for 10 minutes are until the chicken is cooked through. Ensure you turn the chicken frequently to cook evenly. Remove from wok and set aside.

3. Re-heat the wok and gently stir fry the onions until soft then re-add the chicken pieces and mix well.

4. Add all the other ingredients and simmer for a further 10 minutes or until the sauce thickens.

Serve on a bed of Basmati rice.
