Take-away favourite!
The classic onion bhaji. A lot easier than you would think.Ingredients;
2 Large onions, sliced.
4 oz/ 200 g of flour.
1 Teaspoon of ground coriander.
1 Teaspoon of ground cumin (or seeds).
2 Eggs
Cooking oil
Method;
1. Whisk up the eggs and throw in your onion slices/ rings and give it a good mix.
2. Add the cumin, coriander and flour and mix well to cover the onions fully.
3. Deep fry on high heat a tablespoon full of the mixture at a time for minute or so or until golden brown, turning frequently. Leave longer if you prefer them crispy!
4. Drain on kitchen towel before serving to remove excess oil.
Delicious! Serve with/ before or after your favourite curry or just eat as a snack.
