Rice. Not everyone can make it.
Oddly enough I couldn't make rice for years. Wallpaper paste is the closest I ever got but now I've mastered the beast.
Ingredients;
Basmati rice
Pinch of ground ginger
Pinch of Sichuan pepper
Pinch of ground chilli powder
Pinch of salt
Pinch of turmeric
2 Cinnamon sticks
1 Spring onion finely chopped
1 Fresh green finger chilli, finely chopped
1 Fresh red finger chilli, finely chopped
1 Crushed garlic clove
Method;
1. Put to boil around 1 pint of water. Add the cinnamon sticks, garlic and chillies.
2. Rinse your rice under cold water in a sieve until the water runs clear and add to the boiling water. Turn down the heat slightly and add all the other ingredients and place a lid on the pan with an air gap to prevent the rice from boiling over. (I put a chopstick across the pan to allow the steam to leave).
3. 15-20 minutes should have your rice cooked to perfection. Test the rice simply by eating a little.
4. Pour the entire contents of the pan into the sieve and remove the cinnamon sticks (careful, they're usually very hot!). Run under cold water for a few seconds and serve immediately.
