A nice quick curry anyone?
Very popular dish down the local Indian.
Ingredients;
3 large tomatoes chopped.
1 green pepper chopped.
1 red pepper chopped.
1 large onion sliced.
1 lb of chicken breast cut into bite size pieces.
3-4 garlic cloves. Crushed.
1 cup of water.
2 tablespoons of tomato sauce/ puree.
The paste;
2 teaspoons of ground ginger.
2 teaspoons of ground cumin.
1 teaspoons of ground coriander.
1 teaspoon of turmeric.
1 teaspoon of garam masala.
1 teaspoon of chilli powder.
1-2 finely chopped green chillies.
2 crushed garlic cloves.
2 tablespoons of tomato sauce/ puree.
1/2 teaspoon of salt.
1-2 tablespoons of oil.
Method;
1. Fill a large pan with the cup of water and 2 tablespoons of tomato puree/ sauce and put on a medium heat.
2. Lightly spray/ wipe a frying pan or wok with cooking oil and stir fry the onion, green and red peppers and the garlic until the onion is soft and golden then empty the contents into the now simmering pan of water. Add the chopped tomatoes and place a tightly fitting lid and leave to simmer on a low heat.
3. Wipe out the pan and re-coat with oil and gently stir fry the chicken pieces until all are white in colour. Add to the pan containing the vegetables.
4. Mix up the paste ingredients in a small bowl adding the oil and puree last until a toothpaste texture is achieved then add to your cooking pot. Stir in well and replace the lid. Cook on a low heat until the chicken is cooked through.
Serve with a spicy rice and na an bread for a delicious meal.
