These are super easy and really fast to make. Can use chicken, pork, beef or even prawns.
Vegetables are also an open option.
Ingredients;
Pack of skewers! I'm using wooden ones from Wing Yip.
1 lb of desired meat cut into 1"/ 25 mm cubes.
1 Large red bell pepper cut into chunks.
1/2 lb/ 250 g of cherry tomatoes. Whole.
Spice mix;
1 Teaspoon of ground ginger.
1 Teaspoon of turmeric.
1/2 Teaspoon of ground cumin.
1 Teaspoon of ground coriander.
1 Teaspoon of hot Madras curry powder.
1 Teaspoon of brown sugar.
1/2 Teaspoon of salt.
1 Tablespoon of tomato puree/ sauce.
1 Teaspoon of garam masala.
1 Tablespoon of cooking oil.
Method;
1. Mix all the spices together in a bowl and stir in the meat until fully coated and leave for 1 hour.
2. Thread the vegetables and meat onto the skewers and place across an oven tray so that the meat and veg are hovering over the dip in the bowl. Repeat until all ingredients have been used.
3. Place in the oven on medium heat for around 20 minutes or until the meat is cooked through. Serve and enjoy.
As the photo suggests I like to serve it on a bed of Basmati rice with a sprig or two of fresh coriander. A cool mint or cucumber dip goes great with chicken.
