Prawn Toast

Awesome stuff and so easy to make!

These are great to whip up if you have friends round for a few drinks.

Ingredients;

1 Tray of fresh, peeled, cooked prawns.
1 or 2 Eggs. Separated. White only. (You can use the yoke for egg fried rice!).
Sesame seeds.
1 Loaf of sliced white bread.
Salt and pepper to taste.

You can also add a pinch of ginger and five spice if you like.

Method;

1. Cut the crusts off the bread and cup diagonally into four small triangles (As photo).

2. Give the white of your eggs a quick whisk along with your salt and pepper and spices. Mash up the prawns with the back of a fork until they become a paste then add them to the egg mixture and mix them in well to form a paste that will stick to the bread.

3. Heat a deep sided frying pan/ wok or deep fat fryer to high heat.

4. Empty the sesame seeds on a large plate and even them out. Dip one side of the a slice of bread into the egg and prawn mixture then press the bread into the seeds to cover the surface.

5. Fry the bread until golden brown on one side then place on kitchen paper to drain any excess oil.

6. Repeat and serve.
