Greek Style Chicken Pie



So. The photo came out terrible.....Looks like we will have to have it again!

This is really awesome and quick to make. No baking skills required!


Ingredients;

1 Packet of Filo pastry (270 g)
2 Large tomatoes chopped.
Handful of fresh spinach leaves roughly chopped.
1lb/ 500 g of Chicken breast (left over pickings also work) chopped/ shredded.
100 g of Feta cheese, broken up.
2 Eggs, well beaten.


Method;

1.  Greece up (get it) a pie dish with butter/ margarine and carefully lay a base down of the Filo pastry in a criss-cross several layers thick. Place in the oven on high heat for 3 or 4 minutes or until the pastry is firm to touch but still pliable then remove to cool.

2. If using fresh uncooked chicken stir fry for several minutes in a frying pan until cooked through then empty into a mixing bowl and add the tomatoes and cheese.

3. Simmer the spinach leaves in a sauce pan until cooked then drain and add to the chicken along with the 2 eggs. Mix well and pour into your pie base.

4. Cut the remaining Filo pastry into strips and lay across the top of your pie until covered. This will need to be several layers.

5. Cook in the oven on a medium heat until the top is crispy to touch.
